Salsa Chicken

A standby favorite of mine. For nights when I need something super easy. I'll think and post more elaborate ones later. I just couldn't be the only "contributor" who hasn't contributed.

1 can black beans
1 cup salsa
1 can corn
chicken breasts
Put all of this in the crock pot and cook! Shred the chicken right in the crockpot. Then put in tortillas with cheese, sour cream, etc.

I'm assuming corn tortillas - or does it not matter? And do you put them in the crockpot or just serve the chicken with them?

I made this tonight for dinner and LOVED it! Two chicken breasts fed 4 adults. I put the beans, salsa and corn in the pot with the chicken on high for less than 3 hours. Then I melted cheese on whole wheat tortillas and folded the crock pot mix in like a casadilla. Fantastic! We'll make these again!

Glad to hear someone liked it! And Aubrey, no I don't put the tortillas in the crockpot. I just scoop the chicken mixture into the tortillas and make quick burritos.

I make the same recipe but add diced green chiles. I swear I make it atleast once a week.
